Mary Ann's Summer Pasta

This month’s Go-Lactipe comes from Aunt Mary Ann, taking full advantage of summer tomato harvest! Boost your lycopene, vitamin A and C and amino acids!


Preparation: 10 minutes
Cook: 20 minutes

Yield: 5-6 servings

INGREDIENTS:
1 lb. spaghetti
2 large tomatoes - seeded and medium diced
5 cloves of garlic - chopped (about I Tbsp.)
1/2 c. fresh basil leaves - chopped
1/2 c. cucumbers - medium diced
1/2 c. olives - sliced
1 c. crumbled Feta cheese
1 c. Parmesan cheese - shredded
1 ½ tsp. Go-Lacta® Powder or more (to taste)
3/4 c. olive oil
salt and pepper to taste

DIRECTIONS:

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente.
  2. Drain and set aside.
  3. Prepare sauce: Mix in large bowl tomatoes, garlic, basil, cucumbers, olives, Feta cheese, Parmesan cheese, Go-Lacta® Powder and olive oil.
  4. Season with salt and pepper.
  5. Serve with sauce over top.
  6. Place extra sauce in a bottle to keep; reheat when desired.
